Best Ever Nutella Scotcheroo Bars

These really are the best scotcheroos I’ve ever had. And the simple reason for that lies in this one word. Nutella. Sure, those classic versions have all the peanut butter goodness you can dream of, but these bars take it to another level with the rich hazelnut addition, the Nutella provides. These bars aren’t the friend of diets and “I’m just about to go out on a run snack” (ask my friend, Devon about that one). No, these bars are for the nights you just got your heart broken and the only thing to console it are the loving arms of chocolate. And I’ll tell you this, they might just end up being the best boyfriend you’ve ever had.

These bars are incredibly easy to put together, and the best part is, you don’t even have to turn your oven on! Just follow the simple directions and before you know it, you’ll have the most luscious dessert you’ve ever experience. Who doesn’t like rich, creamy, and dreamy?!

One note or tip I will provide, is to make sure your corn syrup/ sugar mixture DOES NOT boil. What makes these bars so incredible is the chewiness that is provided by allowing the syrup mixture to incorporate fully but not boil. They key to this is low and slow. So much of baking and being in the kitchen is about the process. So, trust the process. Enjoy the moment. Don’t rush it. Take a minute, unwind from the day and allow the baking to fill your heart with peace and joy. And then, at the end, enjoy the fruits of your labor!

What You’ll Need For These bars:

You’re not a cheap wine type of gal. Because every time you go down that route, you wake up the next morning with instant regret. Don’t be the “cheap wine” baking girl, splurge on those quality ingredients. Trust me, they really make a difference.

  • Light Corn Syrup: Make sure it’s light. It provides a nice, sweet vanilla flavor, while the dark stuff provides a robust molasses type of flavor. Also, it took me about 10 minutes to realize they placed corn syrup in the syrup aisle and not the baking aisle. What begs the question, are people seriously using this on their pancakes?

  • Sugar: just the good old granulated stuff! I buy in bulk at Costco, but what you have on hand will work perfectly!

  • Nutella: You might as well buy the big jar. I mean let’s be honest, it goes good on pretty much everything.

  • Peanut Butter: You’ll want to use the good old stuff that has sugar in it. I wouldn’t recommend the natural kind for this recipe.

  • Rice Krispies: My store was out of regular Krispies, so I went with the cinnamon flavored ones they had. It turned out beautifully.

  • Chocolate Chips: This is where I recommend using the quality stuff. One of my favorite brands is Guittard. Another great option is Ghirardelli.

  • Butterscotch Chips: I went with the classic Nestle on these.

These Scotcheroos combine the soft crunch of Rice Krispie treat cereal with a surprising yet genius combination of creamy peanut butter, nutella and warm butterscotch for you. A treat you won’t soon forget.

Ingredients

  • 1 1/3 cup light corn syrup
  • 1 cup sugar
  • 1 cup nutella
  • 1/3 cup peanut butter
  • 1 teaspoon salt
  • 6 cup rice krispies
  • 3/4 cup chocolate chips
  • 3/4 cup butterscotch chips

Instructions

  1. Spray a 9x13" pan with non-stick spray. Set aside.
  2. In a large pot, combine the corn syrup and sugar, over low heat. Stir frequently, until the sugar is completely dissolved in the syrup. Do not let the mixture boil! If you begin to see bubbles, immediately take pot off burner.
  3. Once sugar is dissolved, remove from heat and add the nutella, peanut butter, and salt. Stir until just combined.
  4. Add the rice krispies. Be sure not to crush the cereal. Take your time and stir in gently.
  5. Once all ingredients are combined, pour mixture into your 9x13" pan. Push down with back of spoon to level out mixture. Set aside.
  6. Pour chocolate chips and butterscotch chips in a microwave safe bowl. Heat chocolate in 30 second increments. Stir in between. Continue process until the chips are fully melted.
  7. Pour melted chocolate over rice krispies. You can use the back of a spoon to create a swirl in the chocolate. Sprinkle with salt and let cool completely before cutting.
